Great Banana Nut Power Muffins - Secret Recipe Club

Fabulous breakfast or snack muffins. Something that you can make ahead to be sure you have something healthy and satisfying on hand for slow, take it easy breakfasts or if you are on the run.
Ingredients
  • 1 cup Whole Wheat pastry flour
  • 1 cup Rolled Oats
  • 1½ cup Oat Flour
  • 2 tbsp Cinnamon
  • 2 tsp Baking Powder
  • ½ tsp Sea Salt
  • 1 cup Walnuts, finely chopped
  • 1 cup smushed Banana (about 3)
  • 1 cup fat-free Greek Yogurt
  • 6 tbsp pure Maple Syrup
  • 2 Eggs
  • 2 tsp Vanilla Extract
Instructions
  1. Preheat oven to 350 degrees.
  2. Line a 12 cup muffin tin with liners.
  3. In a large bowl mix together all the dry ingredients. In a smaller bowl mix together the wet ingredients. Stir the wet into the dry until just mixed. Do not over stir.
  4. Pour into muffin tins until they are filled completely. Top batter with the remaining walnuts. Bake for 25-28 minutes.
