Fresh Crispy Pear Salad

This is a great recipe for pears and wow, do we have some incredibly delicious, crispy ones! My friend, Alta, sent us a whole big box of Harry and David Pears and they are outrageously good. Whether eating them just as they are, poached, or as the main ingredient of a salad, these sweet delights are one of our very favorite fruits. Normally I fix a pear salad with a bed of fresh spinach with a nice homemade vinaigrette. However, this time I started out thinking about my apple salad and decided to use a few of our pears instead. The pears are better for this dish a little more on the “green” side rather than ripe. What a nice refreshing side dish! Hope you like it, too. Pear Salad 3 Pears, cut into 1″ pieces 1/4 cup mixed Dried Fruit, such as raisins, currants, cherries 1/8 cup sliced Almonds, toasted 1 stalk of Celery, split and chopped into 1/4″ pieces Dressing 1/4 cup Mayonnaise 1 tsp Sugar (optional) 1 tsp White Balsamic Vinegar 1/8 tsp fresh cracked Black Pepper Pinch of kosher salt Combine pears, dried fruit, almonds and celery in a medium sized bowl. In another bowl, add ingredients for dressing and whisk smooth. Pour over fruit and stir gently until all ingredients are completely incorporated.
