This post is for my friend and Secret Recipe Club foodie, Fallon of Fallon’s Cucina.  I know you are going to love it.  I’ve been wanting to make a flourless chocolate cake forever.  This will be the one! From Fallon: I’d like to thank Suzanne for being able to put together this post and making sure my blogger wasn’t left out of the dark for today. I unfortunately had a family member pass away this past week and the funeral was this past weekend which I had to attend in another state. There was just not enough time in a day for me to get my thoughts organized and prepare for the next Secret Recipe Club installment. I’ve been on such a chocolate kick since I made this cake. I was being cheap and didn’t want to buy any special ingredients for a recipe. I had to have all ingredients in the house in order to make a recipe. Well I loved this recipe from Louisa over at Living Lou, but I needed 1 extra egg. So I bought eggs. At least eggs are healthy and I can use them for fried egg sandwiches (my favorite lately). So that chocolate kick has not disappeared. I’ve eaten plenty of See’s candies that one of my co-workers brought in and I put a nice dent in the box. Dark chocolate chips in my pantry that were calling my name after dinner the other night. It is unbelievable. What can I say, I love chocolate. This recipe was SUPER easy to make. The adjustments I made was to use 4 ounces of bittersweet chocolate and 4 ounces of semi-sweet chocolate. Instead of your normal table sugar, I opted to use a baking blend of Stevia. It worked out just fine and the cake was phenomenal. When whipping up the egg whites, they don’t get super glossy and stiff from using Stevia, but it  will give you the volume needed to fold into the chocolate mixture. If you let the cake rest for a whole 24 hours, it is completely fudgy and rich. I have to agree with my friend, Sharon.  Salsa is it’s own food group.  I mean, other than a seaweed, flax, and kale smoothie, where else are you going to get such a great combination of flavors.  (I’ll skip the Seaweed Smoothie, thanks.)  Tomatoes, onions, peppers, garlic – all good stuff.  Especially if I have some chips as my side dish!  By the way, that is a molcajete on the left.  The thing that looks like a rock, for those of you that were in on that discussion. Jimmy and Nancy Jobe met while living in Hereford.  That’s Hereford, Texas.  Not Hereford, England, although the two certainly have the best looking cattle in the world.  Hereford Whiteface cattle.  I think you’ve heard this from me before.  Probably won’t be the last time you hear it from me either.  They were high school sweethearts and have been married forty years!  They both grew up tending gardens.  Nancy’s parents were both teachers as was Jimmy’s mom.  Jimmy’s dad worked for the Soil Conservation District.  Working hard, learning, and playing in the dirt is in their blood.  Currently living in Plano, Texas, Nancy – a chemist and quality engineer by profession,  a pianist and volunteer music director at their church – and Jimmy – an IT professional, and Chairman of the Board of their church – brought along their gardening skills with them from The Panhandle after living many places, including Germany and France.  By the pictures I’ve seen, they apparently grow lots of good veggies to sustain them with lots of the foods they love.  Their garden is organic and about 18′ X 22′ of raised beds.  They have had an abundance of tomatoes and peppers this year, ergo the salsa. This recipe includes the canning of the salsa.  Canning is one way to make those great home-grown veggies last and last.  Oh, and today just happens to be National Canning Day. I’ve done my part. This salsa is very simple and certainly worth it.  Surpasses ALL salsa recipes of my past.  And will be the only one in my future. Forever and ever.  Amen. Hereford, Texas.  Where the cattle outnumber the people about 1,000,000:1.  If you have ever been within 50 miles and the wind is out of just the right direction (read *almost any direction*), you can “smell” the money in Hereford.  Named for the Hereford breed of cattle, it is home to the Hereford Whitefaces football team, which I believe they now call “The Herd”.  Great football town and the prettiest breed of cattle around.  Hereford is also known as “The Town Without A Toothache” due to the natural fluoride in the water supply.  This is a small farm and ranch town with a population of about 15,000.  It is also my hometown. Not unlike a lot of towns, Hereford has a Facebook page where those of us who lived or grew up in Hereford can gather and reminisce about the old days, meet new and reconnect with old friends.  The topics of conversation have ranged from what year we graduated to who owns what ranch these days to sharing our favorite recipes.  What I have found is that there are LOTS of fabulous cooks who lived in Hereford.  Once we get all these good folks and their recipes together, we are going to publish a cookbook, the title of which will go something like, “What’s That Smell – Pies, Patties and Good Grub from Hereford, Texas”.  But, for now, the recipes will be here under “The Hereford Series”.  My partner in this endeavor who came up with the idea is Kerry Thompson.  I think it is only fitting that we start this series off with his Seafood Paella. Kerry Thompson is quite the world traveler and has shared his recipe for paella.  He came up with this recipe immediately following his return from a trip to Spain.   What kind of person would I be if I were to have been assigned a blog named “Smells Like Brownies” and not pick a brownie recipe to make? Well, I’m NOT that kinda person.  YAY me!! Melissa is the genius over at Smells Like Brownies. Don’t be expecting any recipes with fruit. Nope, this stay-at-home, married-to-a-man-who-doesn’t-give-two-hoots-about-cooking, lady who thinks pumpkin should pass her lips with every recipe that she makes – whew! – does not like fruit. Zip, zilch, nada. However, give her some chocolate and she will go to town! Well, unlike Melissa’s husband, my Mountain Man does like fruit.  But he also is a brownie-a-holic and can’t leave them alone.  So, for the betterment of all mankind, I decided to make Melissa’s Coffee Brownies. Sort of. Mostly the same, but with a bit of Mexican chocolate thrown in for good measure, thus, the title of this post. So, here we go! Print Cafe’ Brownies Author: Suzanne Collier Recipe type: Dessert, Snack Prep time:  15 mins Cook time:  30 mins Total time:  45 mins Serves: 16   Brownies are kinda like the perfect food. Good for breakfast, lunch, dinner or a snack. These brownies incorporate the best of the best, chocolate and coffee. Ingredients Brownie Ingredients: ½ cup Salted Butter 3 oz. Mexican Chocolate 2 Eggs 1 cup Sugar 1 tsp. Vanilla ⅔ cup Flour ¼ tsp. Baking Soda Filling Ingredients: 1 tbsp.+ Heavy Cream 1 tsp. Instant Coffee granules 2 tbsp. Salted Butter, softened 1 cup Confectioner’s Sugar Ganache Ingredients: 1 cup Semi-sweet Chocolate Chips ⅓ cup Heavy Cream Instructions Preheat oven to 350°. To make the brownies, melt butter and Mexican chocolate over low heat in a small saucepan. In a small mixing bowl, beat eggs, sugar, and vanilla until light and creamy. Combine flour and baking soda with the eggs, sugar and vanilla and slowly add the chocolate mixture. Spread the brownie batter into a greased 8″ square baking pan. Bake for 25–30 minutes. As soon as the brownies come out of the oven, combine the cream and coffee granules in a small bowl; stir until coffee is dissolved. My SRC assignment this month was Oh Boy! Karen Cooks! by Karen, of course.  That would be silly if it were by Sandy or Roberta.  So yes, Karen is the cook.  And DOES she cook!  It seems there is no limit to what this talented lady can make – and make successfully.  I mean, hells bells, I can cook just about anything, too.  Doesn’t mean it always turns out exactly as I had hoped.  Especially in the baking department, more specifically if it involves yeast.   But Karen has ALL that mastered.  Everything on her blog said, “Try Me! Try Me”.  But when I saw THESE, I knew it was the one for me. Karen found this recipe by Mark Bittman.  They looked so good I just couldn’t pass them by.  There is always something that I want to make that I’ve never made before. And, well, I’m a cracker virgin. I love crackers!  There is something about the light, crunchy texture and the saltiness that is just my style.  Whether with a great cheese or soup, salad or spread, or whether they are a plain saltine or a big multigrain seeded disk, I love crackers! Did I mention that I love crackers? These crackers are crunchy, tender, flaky, and just melt in your mouth.  And soooo versatile you can make them anything you want with just a little imagination. Where have I been?  Seems that every where I look, everyone knows about homemade fabric softener. Except me. But now, I do. And I want to pass this on to those of you who have been living under the same rock that I’ve been under all these years. Where this “recipe” really started, who knows.  I found lots of people had posted the same recipe on Pinterest with no one giving credit to anyone in particular.   This recipe actually came from One Good Thing by Jillee.  So, at this point, Jillee is getting credit for saving me money and showing me how easy it is to find the “flavor” that I want to smell in a fabric softener. This is a really difficult recipe, so for those of you who have bunions and corns, have a seat.  The rest of you make sure you have carb-loaded before you begin. Author: Suzanne Collier Recipe type: Household Cleaning Prep time:  10 mins Total time:  10 mins Serves: 41   a.k.a. “Suzi’s Softener” (Sure . . . give me credit if you want) Ingredients 6 cups of Water 3 cups of White Distilled Vinegar 2 cups of Hair Conditioner (I used a $.99 15oz. bottle of Suave “Refreshing Waterfall”) Instructions Mix water and conditioner in an 8 cup glass measuring cup or large plastic pitcher. You will want to use a container from which you can easily pour. Using a whisk, gently stir until ingredients are incorporated. Pour vinegar into an old gallon fabric softener bottle and then pour in the conditioner/water mixture. Screw the lid onto the bottle tightly and gently shake. This is not a concentrated product so you will not need to add water when you use it in your washer. 2.2.6 You can also make your own dryer sheet by spraying a little softener on a rag and throwing it in with a load of laundry into the dryer. I figure I spent about $2.50 for a GALLON of fabric softener as opposed to $6-$9 for the same amount at the grocery store. The blog I received for my Secret Recipe Club assignment for this month is one of my very favorites!  The Haggis and The Herring a.k.a. Daniel and Meredith, have recipes with some of the best ingredients, flavorful spices, and just deliciously simple to make.  Not only that, but Daniel is one of the nicest guys you will ever meet, which makes me sure that Meredith is one of the nicest ladies you will ever meet, too. Not that I’ve met Daniel personally, but virtually, he is a GREAT guy.  Very helpful and courteous and full of, well, . . . . knowledge! I know, me bein’ from Texas and all, you expected me to say something else. Daniel and Meredith’s blog started as a blog for their wedding.  Then, after some encouragement from Meredith, Daniel took some culinary art classes and became more involved in Mediterranean and regional Spanish cuisine.  His love of cooking started with his uncle, catching and preparing Mako Shark when he was young and his love for cooking never waned.  Meredith is a personal travel agent, knitter and baker.  So, you know when you see something yummy and baked on The Haggis and The Herring, it is most likely a recipe from Meredith. I love looking through the recipes in Daniel and Meredith’s blog.  Many are very international, and most are very simple flavors that are perfect together.  The recipe that I chose is one of the many that fit all of those adjectives.
