Summer Tostadas (SRC)

Where do I begin? Honestly, I began planning for this post a month ago.  Then, somewhere along the line I slipped a cog. Or two. And lost a couple of screws, too. THIS is the post I was assigned.  The recipe for A Very Southern Blueberry Pie was actually from the blog, Canela Kitchen, that I was assigned last month. Such is life. I have learned to roll with the punches and not take myself too seriously.  I could have freaked out.  There could have been wailing and gnashing of teeth. However, I look at this as an opportunity to post from two fabulous blogs with two outstanding recipes that are simple and simply delicious! I found a loose screw or two that belonged to my head and have replaced them.  Hopefully it is the last thing I will screw up for a while. Summer Tostados is an adaptation from Veronica Miller’s blog, Veronica’s Cornucopia.  And what an appropriate name!  She offers a virtual plethora of goodies to eat, many of which are calorie conscious.  And lots of them are vegetarian, such as this one, Corn, Avocados, and Black Bean Tostadas.  LOVE the idea of all the fresh veggies!! Also, this is Monday.  And I’ve been fixing meals on Mondays, of late, that are meatless.  Thus, Meatless Mondays for us.  It’s not a new idea.  There are lots of bloggers that participate in a formal Meatless Monday.  We participate informally. And I use the word “We” very loosely. Mountain Man is a meat and taters kinda guy.  Actually, he could even do without the taters.  Last Monday we had Mai’s Meatballs and Spaghetti Sauce without the meatballs and plus some zucchini.  He really enjoyed it and commented that if I wasn’t careful we wouldn’t be eating meat at all very soon.  LOL! Except for Mondays, I don’t remember feeding him a meatless meal any other time.  So, I told him about Meatless Mondays and he was a bit stunned.  He had no idea that Mondays were our meatless days.  I think he was led astray by the number of meals I eat during the week that don’t contain meat.  Probably gave him the idea that there was more of those meals than the true reality of it all. However, he raved (in a good way) about how good these tostadas were.  “We” will definitely be having these again on Mondays.  Possibly Tuesdays. […]
