Remember this? So, we had about a whole skewer’s worth +/- of leftovers from this meal. The next day for lunch and the following morning for breakfast, I did this: Grilled Margarita Chicken and Vegetable Wraps AND Grilled Margarita Chicken and Vegetable Breakfast Burritos Rough chop the leftover chicken and veggies and put in a big mixing bowl with any leftover rice you have. Add: Salsa to your liking (mine was about 1/2 cup) Grated Cheddar Cheese (or Monterey Jack with or without jalapenos – about 1 cup) Stir until mixture is thoroughly combined. Spoon mixture into flour tortillas. Heat a tablespoon or two of oil in a skillet on medium heat. Place wraps a.k.a. burritos in skillet with the flap side down. Grill until brown. Turn and grill other side until brown. Then eat and enjoy another great leaftovers meals. This made 4 wraps a.k.a. burritos. So, we had two for lunch and the other two for breakfast the next morning before heading out on our fly fishing trip on the Yellowstone River with our friend, Bill, who lives in Bozeman. This is great meals that would be worth making the skewers JUST to have these wraps! OK, so I don’t have pictures of the wraps or burritos, but I do I have these pics. Maybe you can suffer through until I get some food pics back up.
